Mozafati dates are one of the varieties of dates that are cultivated and harvested only in Iran. [1][2] Kerman province is considered the largest producer of these dates in the world.

 

Mozafati date or the famous Bam date has between 20 and 25% moisture when fresh. [3] This type of date is not considered a dried fruit due to its high humidity and its storage conditions are between -5 and 5 degrees Celsius. Currently, this date is sold in different brands in the domestic markets of Iran and international markets. Although most of the exports to Muslim countries are for the month of Ramadan.

 

The Mozafati date tree is fertilized almost in the last months of winter and after the production of the date cluster, it is pollinated manually with Tarune (Krishko in the local language) and over a long period of time it turns into different colors and in the last stage of collecting dates, it is started and until The end of summer continues.
